Yes you can, the charcoal basket is positioned in the centre, ignited by the gas burners - you can cook with gas on either side.

Lava rocks are no longer recommended due to hygiene issues, for cooking with charcoal simply add Outback Hybrid Charcoal Briquettes to the charcoal tray, Outback also sell a replacement for lava rocks called "Hot rocks"
